日々 Using Yamada Nishiki grown in Hyogo and water from Kyoto. And some secretive blend of rice and polishing rates. Clean, Super Crisp & super Dry. Plenty Acidity on the palette unlike most sakes. A subtle Smoky mid-range can only be felt if taste buds exceeds a certain concentration, Very smooth aftertaste, no alcohol is felt, but a lingering texture that makes one want to chew on it. One would immediately want to have another sip.

Aramasa ‘Cosmos’
新政 '秋桜' It is produced with the traditional Kimoto method. The rice used is Kairyoshinko and Aramasa used to be an only brewery to produce sake with using this rice until a few years before, so it’s a signature rice of Aramasa. The texture is smooth, and the balance of sweetness, umami, sourness, and bitterness are lovely with a sophisticated complexity. The sake is fermented in wooden barrels instead of the usual steel tanks, giving it a savoury umami finish.

Aramasa 'VIRIDIAN'
新政 '天鷲絨' Commonly known as "Viridian." Made using Akita's high-grade sake rice "Misato Nishiki." The rice is flat-polished to 50%, which brings out the best of Misato Nishiki's potential. "Tenjuu" is the most powerful sake in the Colors lineup, with the deepest flavor and lingering aftertaste. The quality of this sake has improved in recent years, partly because the majority of the cultivation area has been switched to pesticide-free cultivation. The full-bodied flavor can be fully enjoyed immediately after pressing, but it also has the ability to age for a long time, rivaling Ash Earth.
